His restaurants—Salazar, Mita’s, Goose & Elder—are acclaimed spots for “New American” cuisine combining the traditions and flavors of Latin America. Jose is a native of Colombia, however it’s Peru that has captured his heart and culinary soul. Together we’ll eat, bike, walk, trek, bar-hop, and cook Peruvian cuisine with local chefs—and have so much fun doing it.

We’ll explore artsy Lima, taste and cook traditional Peruvian cuisine, hike the Inca Trail and experience sunrise over Machu Picchu. Joining us on this incredible journey is Traci Des Jardins and Enrique Sanchez, two of the Bay Area’s finest when it comes to food and drink. Traci is a two-time James Beard Award-winning chef whose Latin roots and California-farm upbringing instilled a lifelong devotion to sustainability and locally sourced produce. Enrique is a Peruvian native who landed in San Francisco to create a new life—one that’s made him one of the top bartenders in the country. Together, Traci and Enrique share a deep respect for one another as friends and collaborators. We are honored to experience Peru with them.

You’re joined by Chef Andrew Black, a founder and the executive chef of the four-restaurant concept Culinary Edge in Oklahoma City. Consider each establishment — Grey Sweater, Black Walnut, Gilded Acorn, and La Baguette — a gateway into the inner workings of the creative mind of this James Beard Best Chef contender. Andrew’s curiosity of cultures and cuisine has led him to different corners of the world to create exceptional meals, and Peru is no exception. We can’t wait to build everlasting memories through connection, culture and—of course—food on this incredible adventure with Andrew.
