You are gliding along the Mekong Delta past vibrant bands of floating markets, savoring freshly harvested dragonfruit and pineapple from the prows of passing boats. Tonight, it’s Hoi An’s best street food, egg-meringue coffee at a neighborhood café and fresh tam huu rolls and crispy banh xeo pancakes in the kitchen of a local family. Tomorrow, you trade boat for bicycle and peddle gently past emerald rice paddies and ancient villages. Many people have visited this magical place; nobody has experienced it quite like this. You’re experiencing the true essence of Vietnam — pure immersive bliss — and it’s impossible to get enough of it.
With us on this incredible adventure is Chef Tiffany Derry, the force behind Roots Southern Table and a Top Chef all-star. Tiffany is a passionate disciple of Vietnamese cuisine, and she’s excited to return to the country that’s so deeply shaped and inspired her cooking. Her sense of fun and adventure make her the perfect partner for tasting everything Vietnam has to offer — and then tasting some more!

Dive deep into Vietnam’s regional cuisines, explore Hanoi’s street markets, walk ancient lanes in Ho Chi Minh City, discover central Vietnam’s Imperial roots in Hue, and have plenty of time to eat and shop through Hoi An’s fabled markets. This isn’t a mere vacation — it’s an 10-day discovery of one of the world’s most delicious destinations.

3 Reasons to Travel with Tiffany Derry
Tiffany Derry is a force. Listening to her speak — as a member of Les Dames d’Escoffier, or a spokesperson for the James Beard Foundation’s sustainability efforts — and it’s hard not to feel inspired and motivated. She’s the brain and soul behind her company, T2D Concepts, a showcase of restaurants, spices, and apparel. Above all she’s a traveler at heart, a wanderer who believes that the more we explore the world, the more we realize how much we truly have in common.

Traveler at Heart
Tiffany's first trip outside the U.S. was to France at the age of 18. It's when her love of travel and food collided — and she’s never looked back. Tiffany leaves her Texas home base at least once a year to explore the world, often through its food and cuisine culture, and brings back inspiration for her restaurants in Dallas and Austin.
Vietnam is Love
Tiffany loves southeast Asia, but she really loves Vietnam. From the French influences and traditional regional cuisines to the market-fresh ingredients and incredible street foods, Vietnam is the best. And the fish sauce? “C’mon! Give it to me!!”
A Force for Good
Growing up in the South, field-to-table eating was not a trend but simply a way of life for Tiffany’s family. Today, when she’s not in the kitchen or traveling as an ambassador of Southern cooking, she’s working to address food waste with the James Beard Foundation.
Your Experience

“I love the French influence in Vietnamese cuisine, the breads and herbs, balanced with the fish sauce.”
Hanoi, Hue, Hoi An, Ho Chi Minh City

“Every time you travel the world, you realize we're closer together, more alike than apart.”
Where We Sleep

Art-filled design hotels in Hue and Hoi An, a luxurious retreat in the heart of Ho Chi Minh City—our accommodations are stylish, modern takes on traditional Vietnamese styles.
Hotel de l'Opera
HanoiOur boutique Old Quarter home base is perfectly situated, a block from the Hanoi's favorite gathering place at Hoan Kiem Lake and the namesake opera house. When not exploring the walkable streets outside, you can relax in the pool or have a cocktail in the quiet, fountain-filled atrium.

La Residence
HueAn Art Deco masterpiece built in 1930, situated on the banks of the Perfume River. Its stunning architecture embraces the past while incorporating contemporary twists. Whether you choose to kick back poolside or meander through its tropical gardens, La Residence is an absolute oasis of comfort.

Hotel Royal
Hoi AnAn impeccable retreat facing the bucolic Thu Bon River and just a stroll away from Hoi An’s ancient Old Quarter. Relax in expansive rooms or at their serene pool, admire their brilliant gallery, or just take in the views from the highest rooftop bar in the city.

Hôtel des Arts Saigon
Ho Chi Minh CityWith smooth lines and sumptuous curves inspired by the principles of Feng Shui, this airy, art-filled hotel combines timeless glamor with a very 21st-century sense of whimsy. Take tea at the Café des Beaux Arts, nestle down in the library with a book, or head to the rooftop saltwater pool for a refreshing dip — then perch on a waterside barstool for a sundowner and enjoy the panoramic views of the city below.

Street food was the star of this trip. I felt like I was on an awesome adventure with a group of friends.
I loved Vietnam. I was charmed by the people and seduced by the cuisine.
I was blown away by how flawlessly Modern Adventure executed this trip. You exceeded my every expectation.

For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
