You’ve heard the legends about Oaxacan gastronomy, yet you’re still unprepared for all of these incredible flavors, the notes of chili pepper, chocolate, and fresh herbs. It’s your first bite of mole negro—just one of the region’s seven moles, refined over centuries, complex and intoxicating—prepared just for us in the home of a local family. It’s been this way all week; from walking the agave fields with a fourth-generation mezcalero to inviting the healing energies of a renowned shaman, every waking hour has roused your senses. This is Oaxaca, a city in love with innovation yet rooted in tradition, a banquet for the senses and a sanctuary for the soul.
There’s no better guide to Oaxaca’s flavors and traditions than Jackie Carnesi, the all-star chef and Texas darling who knows Mexico like the back of her hand. At North Brooklyn’s Nura, Jackie is renowned for serving up bold flavors and innovative creations like green chorizo kofta and Parker House Rolls dusted with saffron and perilla. Though her menu today draws inspiration from all corners of the globe, Jackie grounds her craft in the flavors of Mexico, a place she’s traveled to since she was young. Deeply passionate about conveying the pureness and simplicity of Mexico’s ancient cuisine, Jackie provides a seamless bridge to the cultural and culinary magic of Oaxaca.
No matter how much you may know about Oaxacan culture and food, this journey will teach us, delight us—and leave us hungry for more. Wander colorful markets, taste incredible street food from moles to tlayudas, then wash it all down with the finest artisanal mezcals. This is Mexico like you’ve never imagined.

3 Reasons to Travel with Jackie Carnesi
Jackie Carnesi is a gastronome to her core. A 2023 StarChefs' Rising Star Award winner, she's honed her craft at some of New York’s top kitchens, developing cutting-edge menus celebrated by critics and diners alike. We just can't wait to experience the flavors of Oaxaca beside her.

It All Started in Oaxaca
Though she’s a seasoned chef today, Jackie admits she was a picky eater as a child. Her awakening? Mole negro in Oaxaca. Her father convinced her to take a bite of his “chocolate chicken,” and she’s been chasing new flavors ever since.
Rooted Across Borders
Jackie grew up in the southernmost tip of Texas and would often travel down to Mexico on road trips with family. These adventures took her everywhere from Guadalajara to Cancún, leaving Jackie with a deep-rooted love for Mexico and its people.
Spirit of the Land
There’s nothing Jackie loves more than the feeling of the open air: Back in Texas, she spent her childhood riding horses and puttering around in the garden. In New York, she continues to draw on the outdoors as muse—fresh, seasonal vegetables are her inspiration in the kitchen.

Where We Sleep

A peaceful oasis in Oaxaca City—our accommodations are small-scale and boutique, the ideal ways to get acquainted with Oaxaca life.
El Callejón
Oaxaca CityOff a central side street, a few blocks from the zocalo and central shops and eateries, a street gate opens into a breathtaking oasis that’s our Oaxaca City home: a boutique hotel with a dozen spacious rooms blending the city’s distinctive styles. Serenity reigns in its thoughtful garden spaces, with palm trees, covered walkways and an outdoor patio bar.

I loved eating goat just after it was lifted from the pit, sipping on a mezcal.
This is more than just a trip. It’s authentic and joyful, and a powerful reminder of why we travel.
The meals made for us in local homes were just heavenly.

Do I need Travel Insurance?
We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
-
What is the cancellation policy?
You may cancel on or before June 3, 2024, and receive a full refund minus a $500 per-person service fee. If you cancel on or after June 4, 2024, there is a 50% cancellation fee. We highly recommend purchasing travel insurance as we are not able to make exceptions to this policy in cases of family/medical emergency or cases of the trip being canceled (see our Terms and Conditions for full details).
