Notes from plaintive guitars float past your ears. Hand-painted ornaments hang from the ceiling, and dance along with your tastebuds. Feasting family-style on a succulent barbecued goat — pit roasted in your honor — you take in the sights and flavors. Wash it down with a bit of mezcal and toast to everything ahead: Zapotec culture, Shaman experiences, strolls through Mayan ruins and private visits with some of the finest artisans in Mexico. This is a serenade for all the senses, as only Oaxaca can provide.
Joining you on this unforgettable adventure is Mei Lin. The Los Angeles-based chef opened Nightshade in 2019 in the downtown Arts District; now she’s deep into Szechuan hot-fried chicken at LA’s Daybird. She’s won Knife Fight and Top Chef, and honored as an Eater “Young Gun” and Zagat “30 Under 30” chef. Basically, she’s a badass in the very best ways. When it comes to Oaxaca, Mei Lin is on a mission to celebrate all the flavors and ingredients — not to mention the heritage mezcal, multi-generational artisans and ancient temples — that make this the cultural and culinary soul of Mexico.
No matter how much you may know about Oaxacan culture and food, this journey will teach, delight—and leave us hungry for more. Wander colorful markets, taste incredible street food from moles to tlayudas, then wash it all down with the finest artisanal mezcals. This is Mexico like you’ve never imagined.

3 Reasons to Travel with Mei Lin
Mei Lin's first job? Working alongside her father at their family-owned restaurant outside Detroit. She never saw herself as a chef or restaurateur, and yet she found herself working alongside iconic chefs including Michael Symon and Wolfgang Puck. Mei Lin melds the subtle details of an artist with a passion for being herself.

Oaxaca on Her Mind
As a chef in Los Angeles, Mei is no stranger to the beauty of Mexican cuisine. This visit to Oaxaca is about exploring the flavors and history that puts this part of Mexico in a league of its own.
Sauce is Boss
One of Mei’s claims to fame is how she plans many of her menus around the sauce she’s using. In Oaxaca, get ready to watch her in her element as we taste our way through traditional moles — all seven!
Paths Not Taken
Mei Lin's parents owned a restaurant, but wanted a different life for her. "I was brought up not to be in this industry. It's very labor intensive. I had a friend who talked me into going into culinary school. I loved every single minute of it and it all started from there."
Your Experience

“Regionality is what makes Mexican cuisine so special.”
Oaxaca City, Monte Albán

“I get ideas from my surroundings, and I love cooking with different ingredients from the local markets .”
Where We Sleep

A peaceful oasis in Oaxaca City—our accommodations are small-scale and boutique, the ideal ways to get acquainted with Oaxaca life.
El Callejón
Oaxaca CityOff a central side street, a few blocks from the zocalo and central shops and eateries, a street gate opens into a breathtaking oasis that’s our Oaxaca City home: a boutique hotel with a dozen spacious rooms blending the city’s distinctive styles. Serenity reigns in its thoughtful garden spaces, with palm trees, covered walkways and an outdoor patio bar.

I loved eating goat just after it was lifted from the pit, sipping on a mezcal.
This is more than just a trip. It’s authentic and joyful, and a powerful reminder of why we travel.
The meals made for us in local homes were just heavenly.

Do I need Travel Insurance?
We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
-
What is the cancellation policy?
You may cancel on or before June 3, 2023, and receive a full refund minus a $500 per-person service fee. If you cancel on or after June 4, 2023, there is a 50% cancellation fee. On or after August 2, 2023 there is a 100% cancellation fee. We highly recommend purchasing travel insurance as we are not able to make exceptions to this policy in cases of family/medical emergency or cases of the trip being canceled (see our Terms and Conditions for full details).
