You’re standing in vineyards sipping one of the finest wines you’ve ever tasted. A leg of lamb slow-roasts in the Andean open air, an homage to the ‘seven fires’ at the heart of traditional Argentine cuisine. You look up and breathe in the view of the snowy Andean range before you. Tomorrow you’re climbing it, like a gaucho, on horseback, and celebrating with dinner at a glorious hacienda. You tuck an alpaca blanket over your lap and raise a glass to your lips. No Malbec you’ve tried compares with this experience in its birthplace.

You’re in the company of award-winning Chef John Manion, a master of South American cooking and owner of Chicago’s El Che Steakhouse & Bar. It’s not just a Chicago Tribune 3-star restaurant — or, as USA Today puts it, “the best steakhouse in Chicago” — it’s a love letter to Argentina, John’s second home. We couldn’t be more excited to travel with him in a place this close to his heart.

If you have a taste for world-class wine, good food and vibrant culture, join us as we hike, dine and drink in the rich history and landscapes, from Mendoza to Uco Valley to Buenos Aires. Meet chefs and winemakers, and artists in their studios. If you travel to stimulate all of your senses, join us in Argentina with John Manion.

3 Reasons to Travel with John Manion

John’s love of South American culture and cuisine started at an early age — eight years old to be exact, when his family moved to Sao Paulo, Brazil. Before long, he was learning the customs and cultures on travels across Argentina and South America. Now in Chicago, he is known for his live fire cooking.

A Yearning for Argentina

John’s soulful connection to Argentina extends far beyond its food. It’s the art, design, and cocktails of Buenos Aires. It's cooking a steak sizzling over an open flame in the Uco Valley. Throughout his extensive time traveling in Argentina, John has built lifelong friendships with winemakers, chefs, artists and cultural tastemakers. Visiting these local comrades and catching up over a Fernet y Coke is what it's all about for John.

His Food is Fire

John has a reputation around Chicago as the “King of Live Fire”, and for good reason. He’s perfected his techniques throughout his career as a chef. El Che is consistently ranked as one of the best steakhouses in Chicago, standing out from the competition with a fierce commitment to Argentine asador traditions. Most recently, he has teamed up with Fitzgerald’s, an historic music venue to create Babygold Barbecue.

The Trophy Case

Authenticity is at the core of everything John puts on the menu. It's this commitment that has inspired multiple Jean Banchet “Chef of the Year” nominations, the “Master of the Flame” title from Chicago Tribune’s “Critic’s Choice Dining Awards" and a score of love letters to the restaurant's 100% South American wine list in publications like Wine Spectator and Food & Wine.

Your Experience

“If you can sit down and share a meal with locals, it helps you just understand the world around you.”
John Manion

Mendoza, Uco Valley, Buenos Aires

“In Mendoza, they're trying to make the best wines in the world and they're succeeding.”
John Manion

Day by Day

Day 1: Mendoza

Bienvenidos to the heart of Argentina’s wine country! If you’ve ever enjoyed a glass of Malbec, you’ll love its homeland. We’ll start with a look into Mendoza, the nearly 500-year-old bohemian town with an Art Deco center—we’ll follow John through the meandering streets, stopping at the Mercado Central butchery where an expert third-generation butcher will share the art of preparing Argentina’s famous steaks.

Lunch is personal at the Zuccardi Bodega, a Mendoza staple where—thanks to John’s friendship with the owners—we’ll be treated like family.

After some downtime at our stunning boutique hotel, we’ll gather again for dinner at the foot of the snow-capped mountains at family-owned Bodega Vinorum. You’ll notice John in the kitchen, too—armed with cuts from the this morning’s visit to the butchery—working with a local chef to produce an unforgettable welcome dinner to celebrate the start of our adventure together.

Day 1: Mendoza Highlights

  • Mendoza tour
  • Lunch at Zuccardi Bodega
  • Welcome dinner by John Manion
  • Stay at Entre Cielos Hotel in Mendoza

Day 2: Mendoza

We’ll start the day with morning at the hotel, maybe relaxing at the hammam—South America’s only Turkish-style bathhouse—or just take time to rest. Next, we’ll make our way to Finca Decero Vineyard for a picturesque (the Andes Mountains are literally hovering behind the estate) three-course lunch with wine pairings, of course. Still have room more? Good! Because now it’s onto another of the region’s most heralded wineries for a tasting tour through their flagship vintages.

In the late afternoon, we’ll return to the hotel for a moment of siesta before our chef’s choice dinner—think organic steaks marking the air with a piquant char, glass upon glass of nuanced Malbec.

Day 2: Mendoza Highlights

  • Morning to relax at hotel
  • Lunch at Finca Decero
  • Seasonal dinner
  • Stay at Entre Cielos Hotel in Mendoza

Day 3: Uco Valley

Today we’ll vine-hop deeper into wine country towards our next home, the Uco Valley. First stop is at small, boutique Bodega Cruzat for a refreshing toast of its sparkling wines. Then we visit Viña Cobos Winery, where modernity reigns supreme—it’s two sides of the Argentinian wine scene, both captivating and delicious.

For lunch, we’re pairing local delicacies and rare vintages at Finca Bandini. Our bellies full, we’ll check into our beautiful Uco Valley home—The Vines Resort, owned by legendary chef Francis Mallmann. And you won’t forget tonight’s dinner at Mallmann’s Siete Fuegos (“Seven Fires”), one of Argentina’s most notable restaurants. As John and company prepares a gaucho-worthy feast of slow-grilled rib eye roasted on seven types of open flame, we’ll gather around the fire wrapped in our Alpaca blankets.

Day 3: Uco Valley Highlights

  • Tastings at Bodega Cruzat & Viña Cobos
  • Dinner at Francis Mallmann's Siete Fuegos
  • Stay at The Vines Resort in Uco Valley

Day 4: Uco Valley

We tap into our inner gaucho today with a full-on Andean adventure! After breakfast, we’ll climb into our 4WD vehicle and ascend 6,000-foot peaks. From here, we’ll continue climbing on horseback until we reach the top of the mesa. Up there, we’ll celebrate with a glass a wine and snacks to tide us over on the way down where lunch awaits us at a local hacienda: freshly harvested seasonal ingredients cooked with traditional gaucho methods.

In the evening, we are the honored guests at one of the valley’s finest restaurants where a celebrated local chef presents a special paired menu featuring asado-style meats cooked to Uco Valley perfection.

Day 4: Uco Valley Highlights

  • Horseback riding in the Andes
  • Hacienda lunch
  • Dinner with local chef
  • Stay at The Vines Resort in Uco Valley

Day 5: Buenos Aires

On to Buenos Aires! After bidding farewell to the Mendoza countryside, we’ll fly to Argentina’s vibrant, mesmerizing capital. On arrival, we’ll toast the city with a delicious lunch at one of John’s favorite haunts: Parrilla Don Julio, a Buenos Aires institution oozing with ambience and sumptuous food and wine.

We’ll start our exploration of Buenos Aires in the barrio Recoleta. This is Eva Perón’s old stomping grounds, where mansions line stately boulevards linked by blooming jacarandas and locals sip frothy cortados at sidewalk cafes. After checking into our hotel, we’ll head to the 1908 Colon Theater, South America’s finest, with a VIP look at the ornate building’s frescos, backstage area and studios.

After a busy day, we’ll have dinner on own and meet up later to experience the electric cocktail scene and top off the night with a festive tango event with incredible dancers.

Day 5: Buenos Aires Highlights

  • Flight from Mendoza to Buenos Aires
  • Lunch at Don Julio
  • Evening tango
  • Stay at Alvear Palace in Buenos Aires

Day 6: Buenos Aires

The barrios of Buenos Aires are essentially separate villages – today we’ll embark on tasting tours of a few historic neighborhoods bursting in local color and lore. First it’s off to the iconic Plaza de Mayo where we’ll stand in awe inside Catedral de Buenos Aires and Casa de Gobierno.

Then, we’ll visit San Telmo, the city’s oldest barrio, whose cobbled alleyways make up the heart of tango. We’ll watch locals dance, play soccer, and hang out at leafy plazas, then drop by the vast local market. Then, in unforgettable La Boca, we’ll savor a warm chori-pan (grilled chorizo with chimichurri) and sip on a local beer, as we listen to street musicians on Caminito street, lined with its iconic bold and brightly painted buildings.

After an afternoon siesta, we’ll meet up at our hotel’s rooftop bar for a final sparkling view of the city, cocktail in hand. Then we’re off to our intimate farewell dinner for a multi-course celebration of Argentine cuisine paired with some of our favorites wines from the week.

Day 6: Buenos Aires Highlights

  • Tastings in San Telmo & La Boca
  • Sunset cocktails
  • Farewell dinner
  • Stay at Alvear Palace in Buenos Aires

Day 7: Buenos Aires

Don’t worry, our experience isn’t over yet! After a late breakfast, we’ll visit Barracas, a once-isolated port area of warehouses and barracks that’s become the city’s vibrant barrios, thanks to an artist-led revival the past two decades. The heart of it is along Pasaje Lanín, where local artist Marino Santa María layered modest houses in sparkling mosaics. Then, we meet the man whose intricately ethereal vision has transformed these streets. Marino will give us an exclusive tour of his studio where we’ll learn the secrets behind his creativity and try our hand at mosaic artwork to take a piece of the Buenos Aires art scene with us.

We’ll celebrate our day, and our journey, with a last cortado or glass of Malbec, before offering fond farewells.

Day 7: Buenos Aires Highlights

  • Exclusive artist-led mosaic workshop
  • Transfer to Buenos Aires airport
